Bacon Pasta Carbonara Recipe

The easiest creamy pasta dish loaded with crispy bacon and Parmesan cheese. This recipe enables your eggs to thoroughly cook and maintains the crispiness of the bacon.

Bacon Pasta Carbonara  Recipe

Ingredients

250g spaghetti

½ cup of grated Parmesan cheese

2 eggs

125g diced bacon

2 tbsp vegetable oil

2 garlic cloves, pounded

A bunch of coriander

Black pepper

Salt to taste

Procedure

Put a large pot of salted water to boil on medium heat

Sauté the bacon and cook slowly until crispy then add garlic

Turn off the heat and put the bacon and garlic into a large bowl.

Beat eggs and half of the cheese in a small bowl.

Once the water has boiled, add the dry pasta, and cook uncovered.

After the spaghetti is a little firm remove it from the pan and add it to the bowl of garlic and bacon while still dripping wet.

Move the spaghetti from the pot to the bowl quickly so that they do not get cold since the heat of the pasta will heat the eggs sufficiently to create a creamy sauce.

Combine everything, allowing the pasta to cool just enough so that it doesn't make the eggs curdle when you mix them in.

Add the beaten egg mixture and toss quickly to combine once more.

Add salt to taste. Add some pasta water back to the pasta to prevent it from drying out.

Serve at once with the rest of the Parmesan and freshly ground black pepper.

You can sprinkle with a little fresh chopped coriander.
