Coconut Milk And Peanut Sauce Matoke Recipe
Matoke is the term used to refer to cooked green bananas. Matoke is a famous Ugandan dish that is has gained fans in Kenya.
To build up the flavour you want, one can add as many spices as they wish to your matoke. Matoke can be served with tea, beef or any other preferred dish.
Ingredients
Half a dozen of green bananas
A medium-sized onion
Two large tomatoes
Two cloves of garlic
Dhania
One green bell pepper
Turmeric
200ml coconut milk
Four tablespoons of peanut butter
Salt
Cooking oil
Water
Preparations
Peel the green bananas, cut each into pieces, and soak them in water to prevent them from darkening.
Chop the onions into thin slices and grind the garlic cloves into a paste
Finely chop the dhania and bell pepper
Blend the tomatoes to a smooth consistency
Cooking
On medium heat, place a cooking pan.
Add oil to the cooking pan and heat a little before adding the onions and garlic paste.
Fry the onions until they turn translucent, then add the chopped dhania and bell pepper.
Add the blended tomatoes and let the mixture simmer for a bit.
Add turmeric and any other spices to the mixture and stir.
Add peanut butter, stir it into the mixture, then add the coconut milk and green bananas.
Add a cup of water to the cooking pan and let the food boil for 30 minutes.
Serve the matoke on a plate and garnish with dhania leaves.
