Delicious Coastal Beef Biriani Recipe
Biriani is a delicious dish consisting of rice and meat mostly found in the Coastal part of Kenya. ‘Sherehe si Sherehe bila biriani’ is a commonly said phrase the Coastal people say regarding their celebrations.
A visit to that part of the country is not complete without enjoying a plate of well-cooked biriani. Below is a highly recommended procedure you should try.
Ingredients
Two large onions
Five large tomatoes
Tomato paste
Dhania
Bell peppers
Ginger
Turmeric
Garlic
Spices
Irish potatoes
Natural/plain yogurt
Meat
Orange food color
Enough Cooking oil
Two large Carrots
Rice
Method of preparation
Cut the meat into big chunks and boil for a little while.
Peel the potatoes and leave them in whole sizes
Dip the whole potatoes in water mixed with orange food color
Deep fry the dipped potatoes in hot oil.
Finely chop your onions, bell peppers, tomatoes, and dhania
Grate the carrots
Divide your chopped onions into two batches
Sauté one batch of onions till they get a golden-brown coating and place them aside
Place the cooking pot on the jiko and add oil and the other batch of chopped onions
Let the onions turn golden brown, then add crushed garlic and ginger then stir
Add your other preferred spices
Then add your chopped bell peppers, dhania and stir the mixture
Add the grated carrots
Blend the tomatoes and add them to the mixture in the cooking pan
Add the tomato paste and enough salt to taste
Allow the mixture to simmer for some time and stir
Add the boiled meat and cover the pot and let it boil
Uncover the pot, pour in the natural/plain yogurt to soften the meat, then cover and let it cook
Open the pot and add the fried colored potatoes together with the first batch of fried onions
Bring the mixture to boil, then taste to check if it is well cooked, then place the pot with the stew aside
Boil your rice till soft, switch of the heat source
Pour a little amount of food color mixed with water into the rice, then allow it to cool
Mix the rice for the food color to spread evenly
Serve the rice with the beef biriani stew
You can spice up the dish with kachumbari, vegetable salad, or stir-fry
