Easy Homemade Mukimo Recipe
Mukimo is mostly associated with the Kikuyu people in Kenya. The Mukimo dish comprises of mashed potatoes, pumpkin/spinach leaves, green maize, and peas.
Mukimo is famous in the country as it is among the many Kenyan dishes served in hotels, restaurants, and local food joints. You can try this recipe to make mukimo at home.
Ingredients
Eight medium-sized potatoes
One cup of green maize
One cup of peas
3 Pumpkin leaves
Cooking Oil
One large onion
Preparations
Wash peel and boil the potatoes in slightly salted water until soft.
In a separated pan, boil the green maize and peas until tender.
Blend the pumpkin leaves or boil them with green maize and peas.
Mash the potatoes, then add the pumpkin leaves, green maize, and peas.
Add oil to a cooking pan, chop the onions and fry them in the oil until they get a brown coating, and put them aside.
Add the fried onions to the mixture and mix them until uniformly combined.
Serve your Mukimo with a dish of beef stew or any other preferred dish.
