Ingredients

250g cups all-purpose

2 eggs

1 cup milk

300g white granulated sugar

1/2 cup vegetable oil

1/2 cup unsweetened cocoa powder

1 1/2 tsp baking powder

1tbsp vanilla extract

1/2 tsp salt

3/4 cup milk, (190 ml)

3/4 cup hot water mixed with 2 tsp instant coffee powder

Chocolate Ganache

1 cup heavy cream or thickened cream

250 g dark chocolate chips

Procedure

Preheat the oven to 350°F and lightly grease the baking tin with vegetable oil and line the base of the tin with parchment paper.

Combine flour, sugar, cocoa powder, baking powder, and salt in a large bowl then whisk to combine well.

Add oil, egg, vanilla, and milk to the flour mixture and beat well to combine for about 30 seconds.

Pour in the hot water with the coffee, and mix until glossy

Pour the cake batter into the prepared tin and bake for about 40-45 minutes.

Insert a toothpick in the center of the chocolate cake it will come out semi-clean with a small amount of cake on it due to the fudgy texture.

Remove from oven and allow to cool completely before frosting.

Chocolate ganache

Pour the cream into a saucepan and heat over low heat for a few minutes.

Once the cream is hot, turn the heat off and take the saucepan off the heat.

Add in the chocolate chips; cover the saucepan with a lid and let sit for 5 minutes to soften and melt the chocolate.

Uncover, and stir gradually until ganache is smooth and creamy Refrigerate for one hour or hour and a half until thick enough then spread evenly over the cake.
