Ingredients

2 cups of boiled black beans

½ teaspoon ground cumin

1 tablespoon vegetable oil

1 tablespoon tomato paste

2 beef cubes or 1 teaspoon curry powder

3 large carrots, peeled and diced

5 cloves garlic, minced

1 cup water

1 large onion

4 tomatoes, blended

1 red capsicum, thinly diced

1 teaspoon paprika

Salt and pepper - to taste

1 lemon - freshly squeezed juice

Procedure

In a big pot, heat one tablespoon of vegetable or olive oil over medium-high heat.

Add the onion and cook, stirring often, for 4-5 minutes or until the onions turn translucent.

Add the chopped tomatoes, tomato paste, carrots, and capsicum. Cook for an additional 10-15 minutes, stirring frequently, over medium heat.

Add the minced garlic and mix well during the final two minutes of cooking. For two to three minutes, cover and steam the vegetables.

Add the boiling black beans once the veggies have begun to soften.

Add the seasonings, such as salt, pepper, meat cubes, curry powder, paprika, and ground cumin.

Add the freshly squeezed lemon juice and water then bring to a low boil and reduce heat to low.

Simmer for 10 minutes, stirring often to prevent the beans from burning to the bottom of the pot.

Serve warm with rice garnished with hot sauce, and avocado.
