Strawberry Cheesecake Crepes Recipe

These fluffy crepes are infused with a creamy cheesecake filling with juicy fresh strawberries and vanilla flavor.

Strawberry Cheesecake Crepes Recipe

Ingredients

4 large eggs

2 cups all-purpose flour

1/2 cup water

1 1/2 cups unsweetened almond milk

1/4 cup vegetable oil

1/4 tsp salt

Sweetener of choice

Filling

250g softened cream cheese

1 cup low-fat vanilla yogurt

1/4 cup natural sweetener of choice

1 tbsp lemon juice

1/2 tsp vanilla extract

4 cups sliced fresh strawberries

Procedure

Crepes

In a large bowl, whisk the eggs, milk, water, butter, salt, flour and whisk until smooth.

Place vegetable oil and wipe over with a paper towel

Pour 1/4 cup of batter per crepe onto the pan, while swirling and lifting the pan to evenly coat the pan base.

Cook until the crepe is set and the edges begin to brown.

Gently peel the edges away from the pan using a spatula and flip to cook the underside.

When cooked through, remove onto a separate plate, and repeat the process with the remaining batter then prepare the cheesecake filling

Cheesecake Filling:

Combine cream cheese, yogurt, sweetener, lemon juice, and vanilla until smooth.

Slice the strawberries and mix them into the cream cheese mixture.

place two tablespoonfuls of cheesecake onto the center of each crepe and fold.

Serve with extra strawberries.

You can dust the crepes with icing sugar
