Githeri is an authentic Kenyan dish consisting of boiled maize and beans. Some prefer to add potatoes to enhance tastiness. This is a recipe on how you can cook githeri with potatoes.

Ingredients

1 cup boiled maize

1 ½ boiled beans

3 large potatoes, peeled and diced

2 medium-sized tomatoes, blended

1 large finely chopped onion

1 tablespoon ginger garlic paste

1 diced green bell pepper

1 carrot

Finely chopped coriander

1 royco cube

3 tablespoons vegetable oil

Salt to taste

Water

Procedure

Heat your pan on medium heat, add the vegetable oil and onions, then cook them until translucent.

Add the ginger and garlic paste and sauté for about a minute until they get a light golden coating.

Add the crushed royco cube to give the food a nice taste and aroma.

Add the blended tomatoes, cover the pan and let it simmer for 3 minutes.

Add diced carrots and cubed bell pepper, simmer for a minute then add the diced potatoes

Stir and cover the pan to allow the potatoes to cook for five minutes before adding the maize and beans.

Add one and a half cups of water and enough salt.

Cover and simmer for about 30 minutes for the sauce to thicken and all the flavors to come together.

Finally, add the coriander, simmer for just a minute, turn off the heat, and serve.
