Ingredients

5 hard-boiled eggs

1 large onion, thinly sliced

1 tomato, diced

1 tbsp of curry powder

1 green capsicum

2 cloves of garlic, grated

I tbsp garlic paste

Chopped coriander

Salt to taste

Cooking oil

One cup of water

Procedure

Boil the eggs for 15 minutes, do not overcook the eggs.

Start by frying the onions in vegetable oil on medium heat until soft and translucent.

Add in the ginger paste and grated garlic, then cook them for 2 minutes

Add the curry powder or any spices of your choice.

Stir the spices and let them simmer for a minute.

Add in the diced tomatoes and stir in.

Cover for 5 minutes to let them soften up and release their juices.

Add the green capsicum and mix. Add in the cup of water, stir and bring it to boil for 3 minutes to incorporate all the flavours.

Add in salt to taste, let the curry thicken, and then add the peeled eggs.

Cover and let it cook for 5 minutes.

Finish off with the fresh coriander.

Serve with a bowl of rice.
