How to Prepare Simple Delicious Pilau at Home

Most Kenyans especially those who reside at the coast, like Pilau. This is because basically, it's the staple Swahili Dish that requires adequate time while preparing. Additionally, due to its sweet taste and aroma, most people love it. 

How to Prepare Simple Delicious Pilau at Home

Well, below are simple ways to prepare your Pilau while at home with simple ingredients.

                    Ingredients

1.Long grain rice probably Basmati - Due to its fluffy nature, basmati rice is the recommended choice when cooking Kenyan pilau rice. It's also inherently fragrant, and it readily absorbs the flavor of spices.

2.Ground pilau masala spice - I prefer handmade pilau spice mixes to store- you can simply buy your spice if you want.


3.Diced stewing beef - while this recipe calls for beef, you may substitute chicken, lamb, goat meat, or leave them out entirely to make it vegetarian.


4.Crushed garlic and ginger - a tablespoon will be used to boil the meat, and another tablespoon will be used to prepare the pilau rice.

5.Whole spices -  such as : cumin seeds, green cardamon pods, black peppercorns, cloves and two cinnamon sticks.

6.Cooking oil –  any cooking oil is oky.

7.Beef broth and hot water - once  youre done boiling youre beef, seeve the soup then use this to cook the pilau ricebut add alittle water depending on teh cups of rice that you had decided to cook.

8.Onion –  Red or yellow onions are fine to use.

9.Salt to taste.

                          Cooking Steps

1.Transfer your measured  rice to a bowl and clean it. run your hand through to stir, then drain. This is the initial rinse. Repeat this process about three times or until clean. The water should be translucent and not too cloudy.

Fill the bowl with water again and allow it to soak. While the rice soaks, transfer the whole spices to a cup filled with a third cup of water, and soak.

2.Boil the meat. In a medium-sized pot, add  salt, the minced garlic and ginger, and enough water to cover the meat. Cover and allow to cook under medium heat for about 30 minutes, or till the meat is tender.

Use a sieve to sieve the meat then set the broth a side {Soup}. Remember this is to be used for cooking the pilau rice.

3.Fry the onions and beef: Using the same pot, heat the cooking oil at medium heat. Add the beef,  and sliced onions. Lower the heat to a low and fry for about 5 minutes, or till the onions are brown, remember to stir continuously so it does not burn. Stir in the crushed garlic and ginger.

4. Add the already set aide broth{ Soup} or hot water to your meat.

5.stir briefly using a wooden spoon or a fork. Next, add the rice then increase the heat to a high and cook uncovered for 7-8 minutes, until much but not all of the water has been absorbed. 

5.Finally, lower the heat, cover the pot with a lid or an aluminum foil and cook for a further 5 minutes until all the liquid is  absorbed and it is cooked through.

6 Allow it  to sit for 5 minutes, before serving with Salad or anything.
