1 onion, minced

5 cloves garlic, minced

1 teaspoon fresh thyme

1 cup chicken broth - low-sodium

3 tablespoon sundried tomato pesto

1 cup heavy cream

½ cup tomatoes - roughly chopped

1 large bunch fresh baby spinach/ kale

¼ cup Parmesan cheese - plus more for if needed

Procedure

Begin by patting the chicken dry using paper towels, ensuring all excess moisture is removed. Then, generously season the chicken with salt, black pepper, and Italian seasoning.  You can include other seasonings if preferred.
