How to Prepare Delicious Creamy Tuscan Chicken

For the Chicken
Chicken thighs (with skin and bones intact)
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon Italian seasoning
2 tablespoon vegetable oil
For the Cream Sauce
1 onion, minced
5 cloves garlic, minced
1 teaspoon fresh thyme
1 cup chicken broth - low-sodium
3 tablespoon sundried tomato pesto
1 cup heavy cream
½ cup tomatoes - roughly chopped
1 large bunch fresh baby spinach/ kale
¼ cup Parmesan cheese - plus more for if needed
Begin by patting the chicken dry using paper towels, ensuring all excess moisture is removed. Then, generously season the chicken with salt, black pepper, and Italian seasoning. You can include other seasonings if preferred.
Next, heat vegetable oil in a large skillet over medium-high heat. Place the chicken thighs in the skillet with the skin-side down and allow them to sear until they turn a golden brown color.

Pour in the heavy cream and bring the mixture to a gentle simmer. Sprinkle in some parmesan cheese and add additional salt according to your taste preferences.
Carefully nestle the cooked chicken thighs into the simmering cream sauce. Let everything cook together for approximately 2 minutes or until the chicken is heated through.
Remove the skillet from the heat source, and proceed to garnish the dish according to your preference. Finally, serve the chicken with your desired side dish.
