Ugali is the most common food among all Kenyan communities. The main ingredients in cooking ugali are maize flour and water.

How To Prepare The Kenyan Staple Meal: Ugali

The flour used to prepare ugali varies from one community to another, depending on the cereal. Some prefer to use sorghum, millet, maize, or all the mixture of the flours.

Ingredients

1 cup maize flour

2 cups water

Procedure

Heat water in a deep pan and sprinkle half a handful of the maize flour.

Cover the pan with a lid until the water boils

Add the maize flour to the boiling water and keep on stirring with a wooden mwiko.

Keep stirring and pressing the mixture against the sides of the pan to break up the flour lumps.

Break the lumps while the mixture is still tender, as it becomes difficult to do so when the mixture starts hardening.

Allow it to cook for 2-3 minutes.

The ugali will be releasing a pleasant aroma to indicate it is ready.

Transfer the ugali to a plate from the pan by placing the plate over the pan and turning it upside down.

Serve your ugali while still hot with a preferred stew or curry.

Ugali can be served with various dishes ranging from vegetables to curries and stews.
