How to Grill The Pork

To make grilling easier, skewer the pork. Poke one end of a pork strip through the skewer, flip the pork over, then poke it through the skewer again. Leave a few inches empty on each end of the skewer to enable you to hold it as you flip. Make sure the skewers are caramelized on all sides by flipping them.

You can alternatively bake at 375 degrees for about an hour, flipping every five minutes and finishing with a minute or two of broiling. It will take around twenty minutes for it to cook through.

In this recipe, the pork has been barbecued traditionally, but you can use beef or chicken. grill it over charcoals. The pork can be grilled over charcoal by spreading it on a wire rack and then rotating them frequently to ensure an even char on all sides and it has cooked through completely.

Ingredients

500g pork

½ cup minced lemongrass

2 tbsp fish sauce

1 tbsp oyster sauce

3 tbsp honey

4 garlic cloves, minced

2 shallots or onions, minced

Salt and pepper to taste

Procedure

Trim the pork of any large bits of fat or gristle. Trim the skin off any skin-on pork belly you're using. Then, slice the meat into 14-inch-thick stripes.

Combine the pork, fish sauce, oyster sauce, sugar or honey, garlic, shallots, lemongrass, and salt and pepper in a mixing bowl. Allow for at least 30 minutes of marinating time, but better overnight.

Poke one end of a pork strip through the skewer, flip the pork over, and poke it through the skewer again to skewer the pork.

If you don't want to use skewers, place the pork on a wire rack and bake for 15-20 minutes or until cooked through at 375°. To get a char on the meat, broil for 1-2 minutes as needed.

Grill the skewers, rotating frequently to ensure even cooking.

Serve the cooked pork in rice paper rolls or in a salad bowl with noodles. Enjoy.
