How to Prepare Creamy Spinach in Peanut Sauce

This dish consists of spinach mixed in a rich, creamy peanut sauce that is very tasty and delicious. It is an easy recipe that uses simple ingredients.

 Vegetables

In most cases, fresh and leafy spinach is used, but you can opt for baby spinach. You can also choose to steam the spinach before placing it in oil or cook them as this recipe directs. If you don’t prefer using spinach, you can use any other type of vegetables.

Peanut

Peanut sauce is the main ingredient in this dish as it gives spinach a creamy appearance. Groundnut paste can be used in place of peanut sauce. The peanut sauce or ground paste needs to be combined carefully with a bit of water so that it does not get scorched at the bottom of the pan. If the sauce gets too thick, you can add some water.

Here is what you need for the recipe;

Ingredients

A bunch of spinach, 200g

50g unsweetened peanut butter

2 garlic cloves, crushed

1 large onion ring, thinly sliced

2 medium tomatoes, chopped

½ cup of water

¼ tsp chili powder

Salt to taste

3 tbsp cooking oil

Procedure

Heat the oil in the same pot over medium heat, add the onion and garlic, then sauté till soft and fragrant.

On low heat, stir in the tomatoes and peanut butter and cook while stirring until it dissolves into a sauce. Add a little water to prevent the mixture from drying.

Add the chopped spinach, cover with a lid and cook for five minutes.

Season with salt and pepper, then serve alongside ugali, rice, or matoke.
