Easy Eggless Lemon Cake Recipe
This eggless lemon cake is moist, sweet and has a rich lemon flavour. It uses readily available ingredients and is simple to bake.
Ingredients
2 cups of self-raising flour
1 cup of sugar
1 cup of milk
½ cup of margarine
2 fresh medium-sized lemon
Icing sugar
Procedure
Wash the lemons and grate one to obtain lemon zest
Squeeze the lemon juice to about 1/4 a cup
Cream the margarine and sugar together until fluffy
Add the milk, lemon juice and lemon grind and combine to a smooth batter
Add flour and salt to the mixture and whisk until well combined
Line the baking tin with baking paper and pour in the cake batter
Bake for 35 -40 minutes at 180 degrees.
Check with a wooden toothpick to see if your cake is well baked, then serve.
To glaze the cake, mix some lemon juice and icing sugar, then drip it over the cake.
You can decorate the cake as desired, adding toppings of choice.
