How to Prepare Grilled Chicken in Coconut Sauce 

Eating chicken prepared using this recipe will leave you with a fantastic impression of the pleasantly smoky flavor in a dense savory coconut sauce.

How to Prepare Grilled Chicken in Coconut Sauce 


500g chicken

1 can coconut milk

1 large onion, chopped

4 large tomatoes, blended

3 garlic cloves, crushed

1 tsp ginger, finely grated

1 tsp black pepper

1 tbsp curry powder

1 tbsp paprika

1 lemon/lime        

2 tbsp cooking oil

½ cup water

Salt to taste

A handful of fresh coriander leaves


Prepare a grill for medium heat while you mix the marinade

In a medium bowl, add half the coconut milk, lemon juice, ginger, garlic, paprika, curry powder then mix

Toss the chicken pieces in the marinade and let it sit for 4 hours

Remove the chicken from the marinade and allow it drain the excess marinade

Grill the marinated chicken for 10 minutes while turning and occasionally basting with the remaining marinade

In a saucepan, add the oil and onions then sauté until soft and translucent

Add the tomatoes, salt, the remaining coconut milk and water then allow it to simmer on low heat until thickened as desired

Add the chicken into the sauce, taste and adjust the flavor accordingly then cook for 5 minutes

Serve then garnish with black pepper and coriander leaves.                     

You can serve with rice, chapati or ugali
