Here is how you can bake a simple vanilla cake with a jiko. This recipe is beginner-friendly; let it guide you to baking your first cake;

Ingredients

3 cups of all-purpose flour

1½ cups of sugar

1 cup of margarine (you can use butter or vegetable oil)

1 teaspoon of vanilla essence

3 tablespoons of baking powder

4 eggs

Procedure

Add sugar and the margarine to a bowl and whisk until airy.

Add vanilla essence and eggs to the mixture and continue whisking.

In another bowl, sieve the flour and the baking powder to avoid lumps forming.

Add sugar and use a hand whisk or fork to mix the ingredients.

Add the mixed flour to the bowl with the wet ingredients a little at a time. Whisk the batter thoroughly before adding more flour to obtain a smooth texture.

Take a small sufuria, apply margarine all around the inside, and dust it up with a light coat of flour. This is to prevent the batter from sticking to the sufuria. The small sufuria will be your baking tin.

Light up a charcoal jiko and take some hot burning charcoal and place it on a big sufuria lid

Take a big sufuria and cover the base with a uniform and not-so-thin layer of salt or sand. Insert the small sufuria into the big one, then cover it with the lid. Place the sufuria on the lit jiko.

Let the cake bake for 80 – 100 minutes. Keep checking the charcoal to ensure it is still hot, and add more when depleted.

Insert a toothpick at the center of the cake; if it comes out, clean the cake is all done.

Take the big sufuria from the jiko and place it aside. Remove the small sufuria from the big one, allow it cool for 15 minutes, then take out the cake and serve.
